Do You Want More Energy & Blood Sugar Control? Fill Half Your Plate with Colorful Vegetables

Hello, my friend, and welcome to The Diabetic Toolbox, where we are on a mission to end type 2 diabetes one family at a time through education, support, and empowerment. Today we are talking about one of the simplest changes you can make to your meals when managing prediabetes: filling half your plate with colorful vegetables.

I have to say that I love vegetables. I honestly cannot think of many vegetables I do not like, well, except maybe okra. Sorry, Mommy. But vegetables are so important when you are managing prediabetes because they can help you add more fiber and nutrients to your meals while creating a plate that is filling and satisfying.

And no, I am not talking about sitting down to a sad little plate of lettuce and calling it dinner. I want you to think about broccoli roasted with garlic, sautéed spinach, colorful peppers and onions, green beans with herbs, cabbage, cauliflower, asparagus, eggplant, zucchini, collard greens, or a beautiful salad filled with vegetables you actually enjoy eating.

Why Non-Starchy Vegetables Matter for Prediabetes

So what happens when you begin filling half your plate with non-starchy vegetables? First, you naturally make room for foods that provide fiber, vitamins, minerals, and plenty of volume without requiring you to eliminate everything else you enjoy. Fiber can also help slow digestion, which can be helpful when you are trying to manage your blood sugar.

You might be thinking, Renee, if half my plate is vegetables, am I going to be hungry again in an hour?  Here’s the important part: vegetables aren’t supposed to be the entire meal.

Build a Balanced Plate That Satisfies You

Think about building a balanced plate.  Half might be colorful non-starchy vegetables, while the other half includes a source of protein and an appropriate portion of carbohydrate.

You might have baked salmon with roasted broccoli, peppers, and a small sweet potato. Maybe it’s chicken with green beans, a big salad, and brown rice.  Your vegetables add volume and fiber, while protein, healthy fats, and carbohydrates help create a meal that feels complete and satisfying.

You are not trying to see how little you can eat.  You are learning how to build a plate that supports your health and still feels like dinner.

Start With Vegetables You Already Enjoy

And you do not have to suddenly start buying vegetables you have never heard of or spend Sunday afternoon chopping enough produce to feed the entire neighborhood. Start with what you already like.  If you love broccoli, put a generous serving on your plate tonight. If frozen vegetables make life easier, use them.

If you enjoy salad, keep washed greens and a few favorite toppings available.  Frozen, fresh, roasted, steamed, sautéed, or added to soups and casseroles can all work.  One of the easiest places to begin is dinner. Before you put anything else on your plate, look at it and ask yourself, “Where are my vegetables?” Then see if you can fill about half of that space with non-starchy vegetables.
