Who doesn’t love Eggplant Parmesan? This is my favorite dish at any Italian restaurant I visit.  It has never failed to add joy to my lunch or evening meal. This dish is a testament to eggplant’s versatility, transforming a humble vegetable into a hearty and satisfying meal. Whether you’re a seasoned vegetarian or just exploring meatless options, Eggplant Parmesan is a must-try recipe that combines rich flavors with simple, wholesome ingredients.

Why Eggplant?

Eggplant is a star in plant-based cuisine, known for its ability to absorb flavors and provide a meaty texture that satisfies even the most ardent carnivores. Recipe: Eggplant Parmesan with Marinara Sauce and Melted Mozzarella

Ingredients:

  • two large eggplants sliced into 1/2-inch rounds
  • Salt for sweating the eggplant
  • 2 cups breadcrumbs (preferably whole wheat)
  • 1 cup grated Parmesan cheese
  • two large eggs, beaten
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves for garnish
  • Olive oil for baking

Instructions:

  1. Prepare the Eggplant:
    • Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes, then rinse and pat dry.
  2. Bread the Eggplant:
    • Preheat your oven to 375°F (190°C).
    • Set up a breading station with three bowls: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs and grated Parmesan in the third.
    • Dip each eggplant slice into the flour, the egg, and the breadcrumb mixture, pressing gently to coat.
  3. Bake the Eggplant:
    • Place the breaded slices on a baking sheet lined with parchment paper. Drizzle with olive oil.
    • Bake for 20-25 minutes, flipping halfway through, until golden brown.
  4. Assemble the Dish:
    • Spread a thin layer of marinara sauce on the bottom of a baking dish.
    • Layer the baked eggplant slices over the sauce, then top with more marinara sauce and a generous sprinkle of mozzarella cheese.
    • Repeat the layers until all ingredients are used, finishing with a final layer of mozzarella.
  5. Bake and Serve:
    • Bake the assembled dish for 20-25 minutes or until the cheese is melted and bubbly.
