Meatless Monday Recipe # 4:  Vegan Coconut Ginger Noodle Soup with Sweet Potatoes, Snow Peas & Crispy Onions

  Hello Friends, today’s meatless Monday recipe is a creamy vegan ginger noodle soup with sweet potatoes, snow peas, and crispy onions. This soup has a lot of ingredients; I cooked the snow peas but ate them separately. I could have also left out the sweet potatoes because the ramen noodles were filling, but the sweet potato gave the soup a pretty orange color. You can eat this soup alone or add a lovely green salad and your favorite crusty bread.  You can skip the bread if it takes you over your carb allotment for the day   It took about 30 minutes to make, and there was plenty for lunch the next day. 

Ingredients:

This recipe makes two large servings.

One Sweet Potato

1 Clove of Garlic

1 Thumb of Ginger

4 oz of Snow Peas

1 TBSP of Fry Seasoning

4.5 oz of Ramen Noodle

1 Lime

¼ oz of Cilantro

2 Pho Stock Concentrate

1 4 oz of Coconut Milk

½ Cup of Crispy Fried Onions

Prep:

Bring a medium pot of salted water to a boil.  Wash and dry produce.

Peel and dice sweet potato into ½ inch pieces.  Peel and mince or grate garlic.  Peel and grate ginger.  Remove strings from snow peas and halve on the diagonal.

Start Soup

Heat a drizzle of oil in a second medium pot over medium heat.  Add sweet potato garlic. Fry seasoning and half the ginger.  Cook, stirring until fragrant, 1-2 minutes.  Stir 3 cups water, cover, and boil, then reduce heat to medium.  Simmer for 10 minutes.

Cook and Rinse Noodles

Once the water is boiling, add noodles to the pot.  Cook, stirring, until tender for 1-2 minutes.  Drain, then rinse noodles under cold water for 30 seconds.

Finish Prep

Halve the lime and chop the Cilantro.

Finish Soup

Add snow peas and stock concentrates to the pot once the sweet potato mixture has simmered for 10 minutes.  Cook, stirring, until the sweet potato is tender, and the snow peas are bright green. 4-5 minutes.  Remove from heat and stir in coconut milk, ginger, and lime juice.

Serve

Divide noodles between your serving bowls, then ladle soup over noodles. Garnish with Cilantro and crispy fried onions.

Final note: please remember that Meatless Monday is a chance for us to experiment with new ingredients seasonings and create dishes that we may not have had before; focus on what you get to eat and not on what you are giving up because it’s only one day a week.  😊 I am sorry I did not show you all a picture of the final dish, we ate dinner and then I realized that I had not taken a final picture of the prepared dish. 😦
